A Mediterranean Salad Is Perfect
On A Hot Day.
Think of the freshness of mint.
Cucumbers cooling your eyes.
The flavors of cilantro and mint burst into your mouth.
For many reasons this is why we call this a healthy Mediterranean salad.
Fresh lemon juice and olive oil tingling the
tip of your tongue and the flavors burst into a symphony.
1 cup cucumber diced small (peeled & seeds removed)
½ cup tomato diced small (seeds removed)
1 ½ tblsp fresh mint finely chopped
1 tblsp fresh parsley finely chopped
½ tblsp fresh cilantro
½ tsp ground cumin
1 tblsp olive oil
1 tsp spoon fresh lemon juice
3/4 tsp honey
½ tsp fresh garlic clove puree
Gently mix all ingredients in a bowl
Pinch of salt and white pepper to taste
Leafy Green for garnished
Arrange leafy green on a plate.
Place the salad decoratively on the plate
Garnish with whole mint sprig.
Note: salad flavor enhances if it sits for two hours.
